1 to 1 1/2 lb Verde Farms grass-fed ground beef (preferably 80% lean)

Kosher salt

Freshly ground black pepper

Brioche or potato buns

Cheese and condiments of choice

Instructions

Divide the beef into four even portions. Gently form each portion into a ball, then lightly press into patties.
Press a small dimple into the center of each patty with your thumb to help prevent doming.
Preheat a charcoal, wood, or gas grill to very hot.
Season both sides of the burgers generously with kosher salt and black pepper.
Grill for about 3 minutes per side for rare, adding about 1 minute per side for each additional level of doneness.
Add cheese before the final flip if making cheeseburgers.
Serve on lightly buttered, toasted buns with condiments of choice.
