The 7-step method
- Start with the right beef. 80/20 grass-fed ground beef gives you the fat content needed for juicy, flavorful burgers. Grass-fed adds the depth of flavor you can't get from conventional beef.
- Form patties gently. Overworking the meat makes tough burgers. Shape into ¾-inch-thick patties, slightly wider than your buns — they shrink as they cook.
- The thumb dimple. Press a shallow indent in the center of each patty with your thumb. This prevents the burger from doming on the grill.
- Season simply. A generous sprinkle of salt and pepper on each side is all you need. Salt right before grilling, not earlier, to keep the patties juicy.
- Hot grill, then sear. Get your grill to medium-high heat (around 450°F). Place patties on the grates and resist the urge to press, flip, or fuss. Let them sear for 3-4 minutes per side for medium.
- Add cheese at the end. Top with your cheese of choice in the last minute of cooking. Close the lid to help it melt.
- Rest before serving. Let burgers rest for 2-3 minutes off the grill so juices redistribute, then build your burger and enjoy.
