Ingredients

These quesadillas are loaded with flavor and nutrition, making them a perfect meal for a family dinner or a quick lunch. The Verde Farms organic, grass-fed beef ensures every bite is tender, juicy, and wholesome. Enjoy!

 

For the Filling
  • 1 lb Verde Farms 85/15 Ground Beef
  • 1 tbsp Olive Oil
  • 1/2 Onion, finely chopped
  • 1 Red Bell Pepper, finely diced
  • 1 cup Baby Spinach, chopped
  • 2 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • Salt and Cracked Black Pepper, to taste
  • 1/4 cup Fresh Cilantro, chopped
For the Quesadillas
  • 8 Whole-Wheat Tortillas (or gluten-free tortillas)
  • 1 1/2 cups Shredded Cheddar Cheese (or a mix of cheddar and Monterey Jack)
  • Cooking Spray or 1 tbsp Olive Oil
Optional Toppings
  • Fresh Salsa or Pico de Gallo
  • Sliced Avocado or Guacamole
  • Low-Fat Greek Yogurt or Sour Cream
  • Lime Wedges

Instructions

Cook the Filling
  1. Heat a large skillet over medium heat and add the olive oil.
  2. Sauté the onion and red bell pepper until softened, about 3–4 minutes.
  3. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through, about 7–8 minutes.
  4. Stir in cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Cook for another 1–2 minutes to blend the flavors.
  5. Add the chopped spinach and stir until wilted, about 1 minute.
  6. Remove the skillet from heat and mix in the fresh cilantro.
Assemble the Quesadillas
  1. Lay 4 tortillas on a clean surface. Evenly distribute the beef filling across the tortillas.
  2. Sprinkle shredded cheese over the filling, then top with the remaining tortillas to create a sandwich.
Cook the Quesadillas
  1. Heat a large non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of olive oil.
  2. Place one quesadilla in the skillet and cook until the bottom is golden brown and the cheese begins to melt, about 2–3 minutes.
  3. Carefully flip and cook the other side for another 2–3 minutes, pressing gently with a spatula to ensure even cooking.
  4. Repeat with the remaining quesadillas.
Slice and Serve
  1. Transfer cooked quesadillas to a cutting board and slice into wedges.
  2. Serve warm with your favorite toppings like salsa, avocado, Greek yogurt, or lime wedges.
